Cream Cheese Foldovers Recipe

Have you ever passed the Copenhagen Ice Cream store when they are making waffle cones?  The smell is irresistible!  Each time they light that waffle iron up, they have made a sale – to me, of course!  I am like a moth to the flame when it comes to baking smells.  It is no different with the smell of cookies in the oven.  I love them all. 
Today, I made one of my all time favorite Christmas cookies; Cream Cheese Foldovers.  They are melt in the mouth good!  The best part? 4 ingredients!  That is all the rage, isn’t it?  Four ingredient recipes have been hitting the shelves at all the popular bookstores.  Here’s my contribution:

Cream Cheese Foldovers

  • 1 c. butter
  • 8 oz cream cheese
  • 2 c. flour
  • 1/4 tsp salt

Cream butter and cheese until well blended.  Sift flour and salt together and add to butter mixture.  Blend well.  Cover and refrigerate for 2 hours.
Roll dough out on sugar (or flour) covered surface.  Cut into trapezoid shapes about 2” wide.

Now I know I said 4 ingredients; technically you need to add a few more ingredients (for flavor).  I used Strawberry and vegemite because it is what I have on hand.  You can use whatever flavored jam you like (apricot is very yummy).
Place a dollop of jam in the middle of the trapezoid.

Fold over the long edges and seal with a pinch.

Bake at 375° (180° C) for 15 minutes or until golden brown.

This is obviously strawberry jam.  I also used vegemite for mini-me.

If you like vegemite, you’ll love it in these cookies; it’s a lot like cheesy-mite.
No matter what filling you choose, you’ll love these cookies!  Perfect for Santa too! 🙂
